Instructions
- Beat the softened cream cheese until smooth, then mix in pumpkin puree, vanilla extract, and pumpkin pie spice.
- Gradually stir in crushed graham crackers and powdered sugar until the mixture is thick and holds together.
- Use a tablespoon or cookie scoop to portion out the mixture and roll into balls on parchment paper.
- Chill in the refrigerator for at least 30 minutes to firm up.
- Melt chocolate using a double boiler or microwave, then dip each chilled ball into the melted chocolate, covering completely.
- Place coated truffles back on parchment and add optional toppings before the chocolate sets.
- Allow the chocolate to fully set, refrigerate for an additional 15-20 minutes if needed, then serve or store.
