- 1 large egg
- 1 tsp vanilla extract
- 1 cup powdered sugar
- 1/2 cup unsalted butter, softened (for frosting)
- 2 cups powdered sugar (for frosting)
- 1-2 tbsp milk (for frosting)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In a separate large bowl, cream butter and brown sugar until fluffy.
- Add egg, vanilla, and apple cider; mix well.
- Gradually add dry ingredients to wet mixture; mix until combined.
- Scoop dough onto prepared baking sheets, about 2 tablespoons per cookie.
- Bake for 10-12 minutes until edges are golden.
- Let cool completely on wire racks.
- Prepare the frosting by beating butter, powdered sugar, and milk until smooth.
- Spread frosting on the flat side of one cookie and top with another to form a pie.
Notes
- Make sure cookies are completely cooled before frosting.
- Filling can be flavored with a pinch of cinnamon or nutmeg for extra warmth.
- Store in an airtight container for up to 3 days.
