  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup apple cider
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1-2 tbsp milk (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate large bowl, cream butter and brown sugar until fluffy.
  4. Add egg, vanilla, and apple cider; mix well.
  5. Gradually add dry ingredients to wet mixture; mix until combined.
  6. Scoop dough onto prepared baking sheets, about 2 tablespoons per cookie.
  7. Bake for 10-12 minutes until edges are golden.
  8. Let cool completely on wire racks.
  9. Prepare the frosting by beating butter, powdered sugar, and milk until smooth.
  10. Spread frosting on the flat side of one cookie and top with another to form a pie.
